Give them Cake

Chocolate brings people together. When paired with the Sunrays on a Sunday afternoon. Window open, even if it`s deep Autumn already. As if rebelling against the establishment of the when what and how to eat etiquette. This is a lunch and this seems right. This was our cacao ceremony. The remnants of chocolate cake turned into dry crumbs and coffee stains that speak volumes of the exchange at the table. We were happy that afternoon and we washed it down with Pastis. Cacao Ceremony

•200g raw dark chocolate in powder (80% don’t go below 70 pls ) + tbsp of Guarana  •100 g cocoa butter  • cup of coconut oil or old school 170-250g of butter depending on how moist you want it. •shot of espresso + tsp of espresso in powder. •pinch of salt is a must  •170 of coconut sugar (the amount I found in the cupboard)• •5 eggs  Bagno Maria for chocolate, Guarana and the butter and espresso powder, while that is in process whisk eggs and sugar.
