A simple and quick whip-up solution for breakfast or those “I need something sweet” moments.
All you will need is :
1 cup ( or two ) of almond meal, simply grounded almonds. Their texture is a bit chunkier than a finely grounded almond flour.
1/2 cup of grounded linseed, activated by soaking them in warm water until they become gel consistency like.
2 tbsp of psyllium husk.
1 egg, that you can omit if you feel comfortable using linseed as the egg replacement.
Pinch or two of cinnamon. Same goes for the nutmeg and the salt.
Blend all together in the mixer of your choice. If you wish them thinner add more water. Test with one to try out the possible preferences. Testing is always the key.
Prepare the pan, not too hot, use the fat of the preference, butter, ghee, coconut oil to coat the bottom, Wipe it off if there’s too much. Lay the mixture with a tablespoon. Flip it when it’s light to dark golden.
The rest is on you. You can serve it with nut cheese, nut butter, Parmigiano, fruits.
My personal favourite is with paned fruits. In an additional pan, I would melt a bit of ghee or coconut oil and lay down the slices of apples, pears, nectarines or apricots sprinkled with extra cinnamon. This in its self is a dish or a dessert that I use when I want something sweet.
